Two-ingredient recipes fascinate me. The idea that two ingredients can turn into something delicious to eat is kind of crazy, but so many times it actually works! I'm also a beginning bread baker, so this two-ingredient lemon bread rolls recipe really called my name. Homemade bread rolls in about 30 minutes using two simple ingredients with no eggs, oil, yeast or butter? Count me in.

These lemon rolls were beyond easy to make. The shopping list for these rolls was so simple, I didn't even need to write it down (and that's saying something!): self-rising flour and lemon-flavored Greek yogurt. The two ingredients are mixed together, rolled into balls and baked until golden. Wow!

These fresh-baked bread rolls are soft and chewy, and the perfect side dish with dinner. Eat them as-is, or slather a little butter on the hot rolls. Lemon butter rolls? Uh, delicious! Store the leftover rolls in an airtight container on the counter, then reheat them for a few seconds in the microwave.

  • The original recipe had an optional lemon glaze made with 1 cup of powdered sugar and 3 tablespoons of lemon juice. Instead, I brushed the rolls when they came out of the oven with a little of the leftover lemon Greek yogurt. Both of these steps are optional.
  • For this lemon bread rolls recipe I bought three 5.3-ounce containers of lemon-flavored blended yogurt.

Here's how to make it: 

  1. Stir together the yogurt and 1 1/2 cups of the self-rising flour in a mixing bowl until thoroughly combined.
  2. Start adding a little more of the remaining 1/2 cup flour until it forms a dough that's not too sticky. (You may not use all the flour.)
  3. Divide the dough into eight equal pieces. Either use the remaining flour or wet your hands to shape each piece into a ball. Place on a parchment paper-covered baking sheet.
  4. Bake in a preheated 350-degree F oven for about 20 to 25 minutes or until golden on the outside and cooked through.
  5. Optional step: Brush the hot rolls with some of the remaining lemon yogurt.
