These are the ingredients you need to gather from your pantry and fridge: flour, baking powder, granulated sugar, milk, butter and vanilla. The ingredients are put into a mug and microwaved for 60 to 90 seconds. My husband and I don't drink milk, so I used evaporated milk for this recipe.

- 1/4 cup flour (all-purpose or gluten-free flour)
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons granulated sugar
- 3 tablespoons milk
- 1 tablespoon butter, melted
- 1/4 teaspoon vanilla
Here's how to make it:
- Melt the butter in an 8-ounce coffee mug. In a small bowl, whisk together the flour, baking powder and sugar.
- Add the milk and vanilla to the melted butter in the mug.
- Stir in the flour mixture until just combined. The ingredients are easiest mixed together in the mug with a fork. Don't overmix the batter. Stir until just combined. You could add some ground cinnamon into the batter.
- Microwave for 1 to 1 1/2 minutes or until set.
- Drizzle with maple syrup or pancake syrup and enjoy! The pancake is hot when it comes out of the microwave. Really hot. Let it cool a minute, if you can resist, before eating.
