Ingredients
- 1 tablespoon plus 1/4 cup olive oil (divided)
- 6 ounces fresh baby spinach, rough chopped, or 10 ounces (1 package) frozen spinach, thawed and moisture squeezed out
- 3 green onions, chopped
- 2 eggs, lightly beaten
- 3/4 cup buttermilk (see Recipe Notes)
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt (or to taste)
- 5 ounces feta cheese, crumbled
- 2 tablespoons fresh dill, chopped
- 1/2 cup shredded mozzarella cheese
Recipe Notes
- If you can't find baby spinach, use regular spinach.

- Store the bread in an airtight container in the fridge.
Here's how to make it:
- In a large skillet, heat the 1 tablespoon olive oil on medium heat. Add the green onions and cook for 2 to 3 minutes.
- Add the chopped or frozen spinach and heat until wilted or warmed through.
- Place the spinach on a plate lined with a paper towel.
- In a large bowl mix eggs, 1/4 cup olive oil and buttermilk.
- Sift flour and baking powder into the egg mixture. Add salt and pepper.
- Mix well to combine.
- Press out any extra moisture from the spinach and add it into the egg mixture with the feta and mozzarella.
- Mix well to combine.
- Spread batter into an 8x4-inch loaf pan that's been lined with parchment paper. Bake in a preheated 350-degree F oven for about 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove and cool for 15 minutes. Slice and enjoy!
