Ingredients
- 2 tablespoons butter, melted, for brushing pan
- 1/2 cup cold unsalted butter
- 4 1/2 cups all-purpose flour
- 2 tablespoons baking powder
- 2 teaspoons kosher salt
- 8 ounces gruyere cheese, freshly grated
- 1/2 cup chopped fresh herbs (rosemary, thyme, chives, parsley, sage, etc.)
- 1 cup buttermilk (see Recipe Notes)
- 1 cup sour cream

Recipe Notes
- Instead of buttermilk, you could use 1 cup milk plus 1 tablespoon fresh lemon juice or white vinegar.
- Keep the biscuits in an airtight container for up to four days on the counter or in the refrigerator.
Here's how to make it:
- Place the 1/2 cup of butter into the freezer.
- Melt the 2 tablespoon butter in the microwave and preheat your oven to 425 degrees F.
- Brush the melted butter in a 13x9-inch baking pan or similar-sized pan. Set aside.
- In a medium bowl mix whisk together the flour, baking powder and salt.
- Remove butter from the freezer and using a box grater, grate into the dry ingredients. Use clean hands and press the butter into the flour mixture combining the best you can.
- Mix in the gruyere cheese and fresh herbs.
- Add the buttermilk and sour cream. Mix until combined.
- Combine with the flour mixture.
- Press the mixture into the prepared pan.
- Use a serrated knife to pre-cut your biscuits and then place into the oven for 30 to 35 minutes until cooked through and golden brown.
- Remove from oven and cool for 5 to 10 minutes before cutting.
