Quick & Easy Asian-Inspired Ramen Cabbage Salad Recipe Is a Family Fan Favorite Salads Side Dishes Vegetables

This Asian-inspired cabbage salad was introduced to me years ago by my sister-in-law, and it has been a family favorite for about 20 years now. In fact, my adult daughter asked me to make it this past week while she was back home for a visit.

Here is your shopping list for this family favorite cabbage ramen salad recipe: green cabbage, slivered almonds, green onions, a package of chicken ramen, cooking oil, white wine vinegar and sweetener of choice. When we need this crunchy cabbage salad to be a full meal we add cooked chopped or shredded chicken for a complete dinner.

Serve this ramen cabbage salad as a side dish with your favorite protein, or add the protein to the salad. We like chicken, but shrimp would also be delicious! I served mine with my five-ingredient juicy flank steak recipe.

Ingredients

Salad

• 1 head of green cabbage, sliced very thinly 
• 1/2 cup slivered almonds, toasted
• 6 green onions
• 1 package chicken ramen noodles, uncooked and broken into chunks

Dressing

• 1/4 cup neutral cooking oil (canola, grapeseed or avocado)
• 1/3 - 1/2 cup white wine vinegar
• flavor packet from chicken ramen
• sweetener of choice (agave nectar, granulated sugar or honey), to taste
• cooked shredded or diced chicken (optional)

Recipe Notes

• To create more flavor, toast the almonds in a dry skillet until fragrant. Be careful not to burn them.

• You could add chopped broccoli, red pepper or other vegetables to this salad recipe. Get creative!

Here's how to make it: 

1. Slice the cabbage as thinly as possible, then cut the slices into thirds to create bite-sized pieces. Put the cabbage into a large serving bowl. Add the onions. almonds and uncooked ramen noodles. If using chicken, stir it in.
2. Make the dressing by combining all the ingredients. Adjust the sweetener to suit your tastes.
3. Add 1/3 of dressing and toss salad, adding more to desired wetness. Serve and enjoy!
