This summer I have found so many great recipes. I really enjoyed this homemade creamy mint and feta salad dressing recipe on my cucumber and chickpea salad, and then on a leftover quinoa salad I had made earlier in the week. Try it on any of your mainstay salad recipes to spice them up and add some creamy deliciousness.

The ingredient list is full of strong flavors and freshness! To make this refreshing mint and feta dressing you'll need fresh mint leaves, fresh dill, feta cheese, olive oil, fresh lemon juice and zest, a Greek seasoning blend, black pepper and garlic. The ingredients are whirled in a blender or food processor until thoroughly combined.

Drizzle this minty, cheesy salad dressing on salad greens, pasta salad, grilled chicken, fish or shrimp, tofu or whatever you enjoy. Or use it as a dip for french fries, raw vegetables or other appetizers that need a creamy dip.

  • pinch of black pepper
  • 2 garlic cloves
