Ingredients
- 1/2 cup sour cream
- 1/2 cup mayonnaise or Greek yogurt
- 3 tablespoons white wine vinegar
- 1 teaspoon celery seed
- 3 cups fresh or frozen corn
- 2 medium tomatoes, seeds removed and chopped
- 3 ribs celery, chopped
- 1 seedless cucumber, chopped
- 1/2 red onion, finely chopped, or 4 green onions, chopped
Here's how to make it:
- Whisk together the sour cream, mayo or yogurt, white wine vinegar and celery seed in a small bowl. Season with salt and black pepper, to taste. (You could add some garlic powder and/or onion powder to the dressing.)
- Put all the vegetables into a large bowl. Add the sour cream mixture and stir to combine. Taste and adjust seasonings. (For a little spice, stir in some chopped fresh jalapeno or crushed red pepper flakes. For a less creamy salad, reduce the mayo or yogurt to 1/4 cup.)
- Serve immediately or cover and refrigerate until ready to serve. Store the salad in an airtight container in the fridge.
