Ingredients
- 4 cups frozen whole kernel corn (thawed) or 5 corn on the cob, steamed until tender and kernels cut off the cob
- 1 small red onion, sliced
- 3 tablespoons apple cider vinegar
- 3 tablespoons olive oil

- Put all the ingredients into a large salad bowl. Season with salt and pepper.
- Toss to combine. Serve at room temperature or refrigerate until ready to serve. Store the salad in an airtight container in the fridge.
