Peanut butter blossom cookies are always a favorite around our house. This time I decided to try a little twist to make the peanut butter blossoms a bit different, but still one of the best cookies around. Instead of using a chocolate kiss, I added a delicious dark chocolate peanut butter cup after baking to emphasize the peanut butter taste while still including decadent dark chocolate at the same time. Don't forget dark chocolate has health benefits!
Here is your shopping list for this easy peanut butter cookie recipe: granulated sugar, brown sugar, peanut butter, butter, an egg, all-purpose flour, baking soda, baking powder and mini dark chocolate peanut butter cups. The cookies are made just like regular peanut butter blossoms with the exception of what's on top!

Ingredients
- 1/2 cup granulated sugar, plus more for rolling
- 1/2 cup packed brown sugar
- 1/2 cup peanut butter
- 1/2 cup butter, softened
- 1 egg
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 24 - 36 mini dark chocolate peanut butter cups (or milk chocolate if you choose)
Here's how to make it:
- In large mixing bowl, beat 1/2 cup granulated sugar, brown sugar, peanut butter, egg and butter with an electric mixer. When smooth add flour, baking soda and baking powder until dough forms.
- Roll dough into 1-inch balls and then roll in more granulated sugar to coat. (You can freeze the balls without sugar to bake later. If you have coarse-grain sugar, use it to roll the cookies in.)
- Place on an ungreased cookie sheet about 2 inches apart.
- Bake in a preheated 375-degree F oven for 8 to 10 minutes or until edges are light brown. Immediately press one peanut butter cup in middle of each cookie. Use a spatula to transfer to a cooling rack and enjoy!
- Store the cookies in an airtight container to keep them fresh.
