Georgia Peach French Toast Casserole Recipe: A Breakfast Casserole to Savor This Summer Casseroles Breakfast Brunch Fruit

We recently were so lucky to spend a weekend in Georgia with friends and family. We were all staying at a rental home and one of our friends really wanted to try Georgia peach french toast. Because of our larger group, I adapted a french toast recipe to make this beautiful brunch casserole to take advantage of the beautiful summer peaches just at their flavor peak.

This fresh peach breakfast casserole doesn’t require a lot of extra sweetness besides a bit of sugar and the juicy, sweet peaches. Here is your shopping list for this wonderful breakfast or brunch recipe: bread, ripe peaches, pecans eggs, milk, granulated sugar, an orange (for zest), ground cinnamon and kosher salt. You can top the finished casserole with powdered sugar, maple syrup or whipped cream – or nothing at all!

Serve this easy french toast casserole at your next brunch gathering, for breakfast on the weekend or even for dessert with vanilla ice cream any night of the week.

Ingredients

  • 10 cups good-quality French bread, sourdough, ciabatta or challah, cubed
  • 5 large ripe peaches, peeled and cut into slices
  • 1/2 cup chopped pecans (optional)
  • 6 large eggs
  • 2 cups whole milk
  • 1/3 cup granulated sugar
  • zest of 1 medium orange, finely grated (optional)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • optional toppings: powdered sugarmaple syrup, whipped cream

  • We didn’t have a casserole dish so I just used an oven-safe large skillet to bake.
  • Try this recipe with nectarines, fresh cherries or even berries. 

Here's how to do it: 

  1. Cut or tear the bread into 1-inch cubes. Leave the crusts on or cut them off. Lightly grease a large oven-safe casserole dish with cooking spray or butter. Add half of the bread cubes to cover the bottom. Sprinkle half the pecans (if using) and peaches. Continue with another layer of the bread chunks, peaches and pecans.
  2. In a small bowl, mix together the eggs, milk, sugar, orange zest, cinnamon and salt.
  3. Pour the egg and milk mixture evenly over all the bread chunks. Make sure the bread cubes on top get coated in the egg mixture. You can bake the casserole now or cover it and refrigerated overnight.
  4. Put the casserole in the oven and bake at 375 degrees F, uncovered, for 35 to 45 minutes. Remove and enjoy with maple syrup or any of the optional toppings.
