I just can't resist summer fruits. Blueberries are in season and these berries are so good for us. Blueberries have many health benefits, and are high in potassium, vitamin C and antioxidants. In this refreshing blueberry whipped lemonade recipe they combine with coconut milk, which has healthy fats and is great for your brain and hydration.
For this whipped lemonade recipe you'll need granulated sugar, lemons, ice, coconut milk and fresh or frozen blueberries. Start by making a lemon simple syrup. Then the ice, some of the lemon simple syrup, coconut milk, fresh lemon juice and blueberries are pureed in a blender until smooth and creamy. Delicious!
This is a refreshing non-alcoholic drink to serve at any summer gathering, like Memorial Day, Labor Day or July 4th. Plus you get the health benefits of blueberries in every sip.

Ingredients
Lemon Simple Syrup
- 1/2 cup granulated sugar
- 1/2 cup water
- zest from 1 large washed lemon
Blueberry Lemonade
- 2 1/2 cups ice
- 1 cup full-fat coconut milk
- 1/2 cup fresh lemon juice (about 2 large lemons)
- 3/4 cup fresh or frozen blueberries
Here's how to make it:
- Prepare simple syrup by placing sugar and water in a small pot on medium and bringing it to a simmer. Stir occasionally to dissolve the sugar completely. Remove from heat, add lemon zest and set aside for 1 hour. When the hour is done, strain the syrup through a sieve and discard the zest. (You'll have more syrup than you will need, so save it in the fridge for one to two weeks to sweeten your iced tea or make more of this delicious whipped lemonade.)
- To make the lemonade combine 1/2 cup of the simple syrup, ice, coconut milk and lemon juice in a blender. Blend until the ice is crushed and mixed in well. Add blueberries and pulse until coarsely chopped. Pour into four glasses.
- This creamy blueberry lemonade can be enjoyed as-is or add some seltzer water for a refreshing mocktail – and, of course, tequila or vodka if you'd like.
