This Smoothie Recipe May Be Ugly, But It's Super Healthy (and Has a Secret Ingredient) Smoothies Vegetarian Breakfast Snacks

Breakfast time can be a bit hectic, and sometimes I just need to get something quickly and go. This smoothie recipe allows me to do that and nourishes my body. I also love that I can use a variety of whole-food combinations to change the recipe based on what sounds good that day.

If you're lucky enough to have a great blender like a Vitamix I have a secret nutritional boost you can add as well: strawberry stems! I learned recently that the stems of strawberries actually have wonderful nutritional benefits. According to the University of Maryland Medical Center, strawberry leaves are high in vitamin C, iron and calcium, as well as contain tannins, which helps with digestion, nausea and stomach cramps. No worries if you don't have a great blender, just cut the stems off and add them that way.

All you need for this healthy smoothie recipe is milk, spinach, chia seeds, nut butter, protein powder, a banana, strawberries and ice. Put all the ingredients into a blender and whirl until smooth and creamy. Enjoy this nourishing smoothie recipe for breakfast or as a healthy snack

Ingredients

  • 1 1/2 - 2 cups milk (I use almond milk)
  • 3 ounces spinach
  • 2 tablespoons chia seeds (or hemp or flax seeds)
  • 2 tablespoons nut butter
  • 1 serving chocolate protein powder (or vanilla or strawberry)
  • 1/2 small banana, frozen
  • 1/2 cup frozen or fresh strawberries with or without stems (optional)
  • 2 ice cubes (optional)

Here's how to make it: 

  1. Put the ingredients into the blender.
  2. Blend until smooth. If desired add more liquid to make thinner or ice to make thicker and colder.
