For this easy slow-cooker teriyaki chicken recipe you'll need boneless, skinless chicken thighs or breasts, low-sodium soy sauce or tamari (tamari is gluten-free), honey, garlic, fresh ginger, rice vinegar, cornstarch and water. Put all the ingredients into a slow cooker, cover and cook for about three to six hours, depending on high or low heat. Remove the cooked chicken, shred and serve with the sauce that was created as it cooks.

Ingredients
- 2 pounds boneless/skinless chicken (I like skinless breasts and thighs)
- 1/2 cup low-sodium soy sauce, tamari or soy sauce
- 1/4 cup honey
- 2 garlic cloves, minced
- 2 tablespoons grated or minced fresh ginger
- 2 tablespoons rice vinegar (or white wine, apple cider vinegar, lemon or lime juice)
- 2 tablespoons cornstarch
- 2 tablespoons water
- crushed red pepper flakes, to taste (optional)
Here's how to make it:
- Combine chicken, tamari or soy sauce, honey, garlic, ginger, crushed red pepper flakes (if using) and vinegar in a slow cooker. Cover. Cook on low about 5 to 6 hours or on high about 3 hours, or until chicken is no longer pink and cooked through. (For a gluten-free dinner, use tamari and not soy sauce.)
- Remove chicken from sauce to a cutting board and shred.
- Pour sauce from slow cooker into a small pot and add water and cornstarch, whisking to combine. Let simmer, uncovered, for 10 minutes. Put the chicken back into the slow cooker or serve with the sauce on top. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
