The flavorful spinach cooks up in a skillet in about 10 minutes. Quick and easy!

Variation: If you want to fancy it up a bit, pour it into a baking dish, top with some buttered panko or breadcrumbs and bake until lightly browned.

Ingredients

• 2 tablespoons olive oil
• 1 small onion, sliced or chopped
• 4 cloves garlic, minced
• 30 ounces (3 packages) chopped frozen spinach, thawed and squeezed dry
• 1 1/4 cups heavy whipping cream
• 1 ounce cream cheese
• 4 ounces feta cheese
• 2 tablespoons chopped fresh dill (or to taste)
• pinch of nutmeg

Here's how to make it: 

1. Heat the olive oil in a skillet. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook 30 seconds. 
2. Add the spinach, cream and cream cheese. Cook, stirring, about 5 minutes. (You could use fresh spinach for this recipe, if desired.)
3. Stir in the feta, dill and nutmeg. (If you can't find fresh dill, use about 1 teaspoon of dried dill, or to taste. Not a fan of feta? Leave it out.) Serve.
