No-Bake Strawberry Pie Recipe: The Easiest Fruit Pie Recipe Ever Pies Desserts Fruit Farm to Table Recipe

My family and I went to a local farmers' market over the weekend and picked up the best strawberries we have ever tasted. We now plan to return every weekend to get strawberries, bread, granola and our other favorites.

I’m personally dreaming up all the goodies I can bake with the strawberries! I’ve already made yogurt parfaits, which my sons and I love. Up next: this delicious no-bake strawberry pie recipe.

The ingredient list is short for this no-bake pie recipe, which is always a plus for me! You will need a store-bought or homemade graham cracker pie crust, fresh strawberries, granulated sugar, cornstarch, water and heavy whipping cream. That's it! Serve this strawberry pie for dessert and get ready for rave reviews.

  • If you don't feel like whipping the cream, use non-dairy whipped cream of the whipped topping in the can.

Here's how to make it: 

  1. Arrange half the strawberries in pie crust.
  2. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
  3. In a small bowl, whisk together cornstarch and water. Gradually stir the cornstarch mixture into the boiling strawberry mixture. Reduce heat and simmer until thickened, approximately 10 minutes, stirring constantly. Pour mixture over berries in pie shell. Chill for 5 hours to overnight. 
  4. In a small bowl, whip the heavy cream until soft peaks form. Top each slice of pie with whipped cream.
