While most of my fresh herb plants die and are replaced each spring, my two chive plants have survived over five years. We're not even a few weeks into spring yet, and I'm overloaded with healthy chives (onion chives and garlic chives). Needing ways to use chives in recipes and also out of salad dressing, this easy vinaigrette recipe was born.

Fresh, simple, light and full of chive flavor, this easy salad dressing recipe was delicious drizzled on my salad. My next plan is to spoon it over grilled chicken, fish or shrimp and use it as a marinade.

Servings: Makes about 1/2 cup

Ingredients

  • 1 large clove garlic, minced or pressed
  • 4 teaspoons white wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh chives (I used garlic chives and onion chives)

Here's how to make it:

  1. Put all the ingredients into a bowl. Season with salt and pepper.
  2. Whisk well to combine. Store in a salad dressing cruet until ready to use.
