Quick Lemon Vinaigrette Salad Dressing Recipe: A Healthy Reason to Skip Aisle 6 Salads Sauces/Condiments
Homemade salad dressings are so much better for you than those bottles you buy next to the packaged croutons on aisle 6. This quick lemon vinaigrette recipe whisks together quickly and tastes amazing!
You may have everything you need already in your kitchen to make this lemon salad dressing: lemons, sugar or honey, Dijon mustard, sea salt and extra virgin olive oil. Start by whisking together lemon zest, fresh lemon juice (fresh is always best), sugar, mustard and sea salt. When the sugar and salt dissolve, start to slowly whisk in the olive oil until it is emulsified. Done!
Use this refreshing lemon vinaigrette on salads, vegetables and pasta salads, or as a marinade for shrimp, fish or chicken. This lemon dressing can easily be doubled or tripled.

- 1 teaspoon finely grated lemon zest
- 3 tablespoons freshly squeezed lemon juice, preferably from Meyer lemons
- 1 teaspoon granulated sugar or honey
- 1/4 teaspoon Dijon mustard
- 1/4 teaspoon fine sea salt, or to taste
- 4 - 5 tablespoons extra-virgin olive oil
Here’s how to make it:
- In a small bowl, whisk together the lemon zest, lemon juice, sugar, mustard and sea salt. Whisk until the sugar and salt are dissolved.
- Add the olive oil in a slow stream, whisking constantly until the dressing is well blended and emulsified. Season with salt and freshly ground black pepper.
