Here are the six simple ingredients you need for these low-sodium sweet yet tart snack treats: butter, flour, sugar, eggs, almond extract and cranberries. The sliced almonds and flaked coconut are optional, but highly recommended.

Ingredients

• 1 cup (2 sticks) butter, melted
• 2 cups all-purpose flour (or gluten-free flour)
• 2 cups sugar
• 3 eggs
• 2 teaspoons almond extract
• 3 cups fresh cranberries (or frozen cranberries)

Optional Toppings

• 3/4 cup sliced almonds
• 1/2 cup flaked coconut

Here's how to make it:

1. With an electric mixer, combine the butter, sugar and flour in a large mixing bowl. Add the eggs and almond extract. (If you want these cookies to be gluten-free, use gluten-free flour.)
2. Fold in the cranberries. (If you don't have fresh cranberries, you can use frozen cranberries.)
3. Spread the batter into a greased 13x9-inch baking pan. Sprinkle with the sliced almonds and/or flaked coconut, if using.
4. Bake in a preheated 350-degree F oven for about 1 hour. Cool and then cut into squares. Store the cookie bars in an airtight container.
