Chicken and Vegetables

  • 1 tablespoon vegetable oil
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 baby bok choy, sliced
  • 2 carrots, julienned 
  • 1 can (15 ounces) baby corn, drained and rinsed
  • 12 ounces rotini, cooked according to package directions

Here's how to make it: 

  1. Combine the sauce ingredients in a bowl. Set aside.
  2. Heat the oil in a large skillet. Season the chicken with salt and pepper, then cook in the hot oil until browned and almost cooked through, about 3 minutes. 
  3. Add the vegetables and cook until crisp-tender, about 5 to 6 minutes
  4. Add the pasta and sauce. Toss to combine.
