Ingredients
Sauce
- 1/2 cup peanut butter
- 1/2 cup hoisin sauce
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons water
- 2 teaspoons rice wine vinegar
- 1 tablespoon minced fresh ginger
- crushed red pepper flakes, to taste
Chicken and Vegetables
- 1 tablespoon vegetable oil
- 2 chicken breasts, cut into bite-sized pieces
- 1 baby bok choy, sliced
- 2 carrots, julienned
- 1 can (15 ounces) baby corn, drained and rinsed
- 12 ounces rotini, cooked according to package directions
Here's how to make it:
- Combine the sauce ingredients in a bowl. Set aside.
- Heat the oil in a large skillet. Season the chicken with salt and pepper, then cook in the hot oil until browned and almost cooked through, about 3 minutes.
- Add the vegetables and cook until crisp-tender, about 5 to 6 minutes
- Add the pasta and sauce. Toss to combine.
