Whether it's piled on top of crisp lettuce, on sandwich bread or served with crackers or potato chips, chicken salad is on of my favorite things. A local deli has the most amazing Cajun chicken salad. After craving it one too many times at home, this chicken salad recipe was born.
This high-protein and low-carb creamy Cajun chicken salad recipe is hard to beat if you like just a little spice in your food. To make this homemade chicken salad recipe you will need cooked chicken that's finely chopped (read about the health benefits of protein), mayonnaise, Cajun seasoning, hardboiled eggs (check out the health benefits of eggs), green onions and red onion.
Cooking Tips: I use Slap Your Mama or Tony Chachere's seasoning, but choose one with the spice level you enjoy. All of them are different. If you don't have leftover chicken, you can use a rotisserie chicken (here's how to make a rotisserie chicken in the slow cooker) or cook a couple boneless chicken breasts and shred.
Different brands of Cajun seasonings have different spice levels. Find one that you enjoy, and adjust the amount to suit your tastes. Ingredients
- 3 cups finely chopped cooked chicken
- 1/3 - 1/2 cup mayonnaise
- 1 - 2 teaspoons Cajun seasoning (or to taste)
- 2 hardboiled eggs, chopped
- 3 - 4 chopped green onions
- 1/4 cup finely chopped red onion (optional)
Here's how to make it:
- Combine all of the ingredients. Season with salt and pepper.
- Serve over lettuce or as a sandwich filling. Store the chicken salad in an airtight container in the fridge.
