All across the south you'll find people putting fresh tomato slices, mayonnaise, salt and pepper on a piece of white sandwich bread – especially when tomatoes are straight off the vine. This is an elevated, mini version of that classic tomato sandwich that can be served as an appetizer or for a fun snack. If you're a purist, leave off the cheese.

Ingredients

Here's how to make it:

  1. Lay the bread slices on a flat work surface. Using a small round cookie cutter or biscuit cutter, cut out circles from the bread. Do the same with the cheese.
  2. Spread mayonnaise on the bread circles. Top with a slice of cheese, then another piece of bread. Repeat layers. Add some salt and pepper, if desired.
  3. Attach a tomato and a leaf of parsley to the top with a toothpick or party pick. Refrigerate until ready to serve.

How fun is this recipe?? I've eaten quite a few tomato sandwiches in my day. I had an aunt that would just eat mayonnaise sandwiches. Do not recommend that. lol I am making these for my family soon!!!
