Ingredients
- 2 cups water
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon (optional)
- 1 cup quick-cooking oats (I used gluten-free oats)
- 2 tablespoons peanut butter or nut butter of your choice (I used reduced-fat chunky peanut butter)
- 2 tablespoons maple syrup
- 3 tablespoons dark chocolate chips
- 1 tablespoon chopped walnuts, for garnish
Here’s how to make it:
In a medium-sized saucepan, bring water and salt and cinnamon (if using) to a boil. Reduce heat and stir in oatmeal. Simmer for about 4 or 5 minutes, until oatmeal reaches desired consistency.
Remove from heat and stir in peanut butter, maple syrup and 2 tablespoons of dark chocolate chips. Scoop oatmeal into two bowls. Sprinkle the remaining tablespoon of chocolate chips on top of each serving. Garnish with chopped walnuts, if desired. Serve immediately.
