Peanut Sauce

Here's how to make it:

  1. To make the peanut sauce, put the peanut butter, red chili sauce, apple cider vinegar, soy sauce and honey into a bowl. Whisk to blend. Thin with hot water to desired consistency – less water for a thicker dip, more water for a thinner dressing. 
  2. To make the chicken, add oil to a skillet over medium-high heat. Add the chicken to the pan and pour the soy sauce over the top.
  3. Cook for about 10-12 minutes, or until chicken is fully cooked.
  4. Stir in 3/4 cup of the prepared peanut sauce. Cook until warmed through. Garnish with chopped unsalted roasted peanuts, if desired.
