This chicken and pineapple kebabs recipe is marinated in a tangy homemade teriyaki barbecue sauce then quickly cooked on your indoor grill or outdoor grill. For these chicken skewers you'll need skinless, boneless chicken breasts, pineapple chunks, onion, barbecue sauce, teriyaki sauce, garlic and fresh ginger. Chicken breast pieces are threaded onto skewers with pineapple and onion. The skewers are marinated in some of the homemade barbecue sauce before being grilled to juicy perfection. The chicken is served with more of the teriyaki barbecue sauce.

Ingredients
- 2 pounds skinless, boneless chicken breasts, cut into bite-sized pieces
- 2 cups fresh pineapple cut into bite-sized pieces or canned pineapple chunks
- 1 onion, cut into chunks the same size as the chicken (optional)
Sauce/Marinade
- 2/3 cup barbecue sauce
- 2/3 cup teriyaki sauce
- 4 cloves garlic, minced
- 1 tablespoon freshly grated ginger
Here's how to make it:
- Combine all of the sauce ingredients. Mix well. Remove about a 1/2 cup and set aside for serving. Pour the sauce into a plastic zipper bag. Add the chicken chunks and allow to marinate a couple hours or overnight. (You could use boneless, skinless chicken thighs if you prefer. Use whatever style of barbecue sauce you like. If you don't have time to marinate the chicken, no worries! It will still be delicious.)
- Remove the chicken from the marinade and thread onto skewers, alternating with the pineapple and onion (if using). Season with salt and pepper, to taste. (You could sprinkle with crushed red pepper flakes for a little heat.)
- Cook on a hot grill, turning often, until chicken is cooked through, about 10 to 12 minutes. (Chicken is cooked through at 165 degrees F on a food thermometer.) Serve with reserved sauce. Store any leftover kebabs in an airtight container in the fridge. Reheat as desired.
