Ingredients:
- 4 - 6 boneless/skinless chicken breasts, cut into 1-inch chunks
- 1 cup cornstarch
- 2 eggs, beaten
- 1/3 cup vegetable oil
Sauce
- 3/4 cup granulated sugar
- 4 tablespoons ketchup
- 1/2 cup white vinegar
- 1 tablespoon soy sauce
- 1 teaspoon garlic salt
Here's how you make it:
- Heat oil in a large skillet. Season the chicken with salt and pepper to taste. Dip the chicken into the cornstarch to coat and then into the eggs. Cook the chicken in the hot oil until browned. Place in a baking dish. (Be sure the oil is hot before adding the chicken.)
- Make the sauce by whisking together all of the ingredients.
- Pour the sauce over the chicken and stir gently to coat completely. Bake at 350 degrees F for about 15 minutes. Turn the chicken over and cook about 10 minutes more, or until done. Serve with brown rice or white rice. Garnish with chopped green onions.
