Ingredients
- 5 ounces (1 can) tuna, drained
- 2 avocados, 1 mashed and one cut in half and pitted
- 4 mini sweet peppers, chopped
Optional Ingredients
- grape tomatoes, cut in half
- microgreens
- chopped red onion
- fresh herbs
- olive oil
Here's how to make it:
- In a bowl, combine the avocado, chopped peppers, tuna and salt and pepper. Mix well. You could use tuna packed in water or tuna packed in olive oil. Your choice.
- Divide evening between the avocado halves, or use four fresh romaine lettuce leaves.
- Garnish with optional toppings like grape tomatoes, microgreens, red onion, fresh herbs or a drizzle of olive oil, if desired. This salad is best served right away as the avocado will turn brown if it sits.
