Stephen Colbert's Mother-In-Law's Bourbon Chocolate Pecan Pie Recipe Is Full of Love (9 Ingredients) Pies Southern Recipes Gluten-free Desserts Cookbooks
If you like bourbon, chocolate and pecans, then you will love this incredible pie recipe. The bourbon chocolate pecan pie recipe comes from Stephen Colbert's mother-in-law, Mrs. McGee, and it's full of love. The decadent chocolate pie gets added flavor from bourbon and a lovely crunch from pecans. It's a must-try-pie!
Stephen Colbert, who until recently served as host of The Late Show with Stephen Colbert, wrote a lovely cookbook with his wife, Evie McGee Colbert. Does This Taste Funny? Recipes Our Family Loves contains many wonderful family recipes and the stories behind them, including this irresistible bourbon chocolate pecan pie recipe.
And to think, this recipe almost got lost. As Evie shares: "A few weeks after my mother died in November 2022, one of my roommates sent me a lovely note of condolence ... she reminded me that not long after we graduated, she was working on a cookbook for her high school and my mother sent her this receipt to include in it. I had completely forgotten about this, and I know my mother had, too ... Receiving the receipt again weeks after I lost Mom was such a gift to me. We baked the pie for our first Thanksgiving without Mom and I felt her every step of the way. There is a lot of love in this delicious pie."
Stephen is grateful that this recipe is back within the family. As he reflects: "A taste of dishes our loved ones shared with us years before can instantly transport us back, gratefully, to tender and intimate moments. Long after those we love are gone, the gift of their food and the love that fed us lives on."
I couldn't agree more, and this pie is a wonderful example of how food and recipes connect us to each other – no matter where we are. Packed with chocolate chips, pecans and, of course, bourbon, this old-fashioned pie recipe is the perfect dessert when entertaining – or just because. To make Mrs. McGee's bourbon chocolate pecan pie recipe, here are the delicious ingredients you'll need: an unbaked pie crust, sugar, flour, salt, eggs, butter, bourbon, pecans and chocolate chips (check out the health benefits of pecans and the health benefits of chocolate).
Serve this divine chocolate pecan pie for dessert on any special occasion, or simply anytime you feel like it. We enjoyed it served warm with whipped cream or vanilla ice cream on top. It would make a wonderful addition to a holiday dessert table as well.
Cuisine: American / Southern
Prep Time: 10 minutes
Cook Time: 40 to 50 minutes (ovens vary)
Total Time: 50 to 60 minutes
Servings: 8
Ingredients
- 1 9-inch unbaked pie shell, unfrozen
- 1 cup granulated sugar
- 1/2 cup flour (all-purpose or gluten-free flour)
- large pinch of salt
- 2 large eggs
- 4 tablespoons (1/2 stick) unsalted butter, melted and cooled
- 2 tablespoons bourbon (or more, to taste)
- 1 cup pecans
- 1 cup chocolate chips
Here's how to make it:
- Blind bake the pie shell or prepare it according to package directions. (My store-bought pie shell did not require blind baking, just defrosting.)
- In a large mixing bowl, add the sugar, flour and salt. Whisk to combine.
- In a medium mixing bowl, add the eggs, melted butter and bourbon. Whisk to combine.
- Add the wet ingredients to the dry ingredients and whisk or stir to combine.
- Add the pecans and chocolate chips. Stir to combine.
- Pour the mixture into the pie shell, ensuring it's evenly distributed.
- Bake in an oven that's been preheated to 325 degrees F until the edges of the crust and the top of the pie are golden brown and the center is firm, about 40 to 50 minutes.
- Allow pie to cool completely before cutting and serving. Top with whipped cream or ice cream, if desired. Store leftover pie in an airtight container in the refrigerator. Reheat briefly in the microwave, if desired.
