If you make as much banana bread as I do, then you may find yourself looking for ways to change it up. Not that there's anything wrong with the typical banana bread, but sometimes it's fun to experiment. That's what I found myself doing when I decided to add bourbon to my latest banana bread recipe. It turns out that this bourbon banana bread recipe is something very special.

My husband loves banana bread as much as he loves bourbon. So I wondered what would happen if I swapped in bourbon for the vanilla extract I often include in my banana bread recipes. I found that the bourbon enhances the banana bread beautifully by adding just a touch of bourbon flavor to the sweet bananas. Delicious!

Isn't it awesome how small changes to a recipe can make such a big difference? This flavorful banana bread recipe uses overripe bananas (check out the health benefits of bananas), and the optional walnuts provide antioxidants and omega-3 fatty acids, among the other health benefits of walnuts.

To make this extraordinary banana bread recipe, you'll need these simple ingredients: flour (all-purpose or gluten-free), baking soda, baking powder, salt, butter, granulated sugar, eggs, overripe bananas and bourbon. The chopped walnuts are optional. You make the batter then bake the loaf until it's cooked through and golden brown.

Serve this very special banana bread recipe for breakfast or as part of brunch, as an afternoon snack or even for dessert. My husband loves it with a bit of whipped cream!

Ingredients

• 1 1/3 cups flour (all-purpose or gluten-free flour)
• 1/2 teaspoon baking soda
• 1/4 teaspoon baking powder
• 1/2 teaspoon salt
• 5 1/2 tablespoons unsalted butter, at room temperature
• 2/3 cup granulated sugar
• 2 large eggs, beaten
• 3 small overripe bananas, mashed
• 2 tablespoons bourbon
• 1/2 cup chopped walnuts (optional)

Here's how to make it:

1. In a medium mixing bowl, add the flour, baking soda, baking powder and salt. Whisk to combine. (To make this recipe gluten-free, use gluten-free flour.)
2. In a large mixing bowl, add the butter and the sugar. Cream together using an electric mixer, hand beaters or a large fork.
3. Add the flour mixture and stir to combine.
4. Add the eggs and stir to combine.
5. Fold in the bananas and bourbon, and the walnuts, if using.
6. Evenly spread the batter into an 9x5-inch loaf pan that's been lined with parchment paper or sprayed with cooking spray.
7. Bake in an oven that's been preheated to 350 degrees F for about 45 to 60 minutes, or until it passes the toothpick test. (If the loaf is getting too brown on top, you can cover it with aluminum foil.)
8. Allow loaf to cool a bit before removing to a wire rack to cool completely before slicing and serving. Store leftover bread in an airtight container.
