Peanut butter and jelly is a classic flavor combination that brings back good memories for just about everyone. This high-protein peanut butter and jelly bark recipe kicks it up a notch in both flavor and nutrition! If you're like me and trying to eat healthier, then this is one recipe I would recommend you try. It's perfect for breakfast, as a snack or even as a healthier dessert. It's a budget-friendly alternative to protein bars, too.
I've been going to the gym a lot and one thing I learned from one of the personal trainers there is that I need to eat more protein (here's more about the health benefits of protein). Cottage cheese is a great source of protein and in this recipe it's blended until smooth with honey, which makes it taste so good. Then you combine it with the peanut butter and jelly, which makes the bark taste like a peanut butter and jelly sandwich. Yum!
To make this easy peanut butter and jelly bark, you only need four wholesome ingredients. Here are the gluten-free ingredients you'll need to gather: cottage cheese, honey, peanut butter and jelly. The granola and/or chopped nuts are optional but add some nice texture. I used natural peanut butter with no sugar because I was trying to be healthier, but next time I'll use regular peanut butter with sugar. I used granola that had seeds in it to add some crunch. All you do is combine cottage cheese with honey in a blender. Then, spread the smooth and creamy mixture onto a parchment paper-lined baking sheet. Next, spread the peanut butter and jelly on top and swirl it with a fork or toothpick. Add the granola or nuts, if using, then freeze at least two hours or overnight before breaking into pieces or cutting into squares.
Serve this frozen treat as a high-protein breakfast on the go, as a sweet snack any time or as a healthier dessert. So easy and delicious (and nutritious, too)!

Ingredients
- 32 ounces (2 containers) cottage cheese
- 6 tablespoons honey (or to taste)
- 1/2 cup smooth peanut butter
- 1/2 cup blueberry jam (or strawberry jam or raspberry jam)
- 1/2 cup granola or chopped nuts (optional)
Here's how to make it:
- In a blender, add the cottage cheese and honey. Blend until smooth, about 30 seconds.
- Spread the mixture onto a parchment paper-lined baking sheet and set aside.
- In a small microwave-safe bowl, add the peanut butter. Microwave until melted, about 20 seconds.
- Spread the peanut butter in rows across the top of the cottage cheese mixture, leaving room for the jelly rows in between.
- Spread the jam in between the rows of peanut butter.
- Using a fork or a toothpick, make swirls in the peanut butter and jelly.
- Sprinkle the granola or nuts across the top, if using, then freeze at least 2 hours or overnight.
- Break into pieces or cut into 12 squares and serve. Store leftovers in an airtight container in the freezer.
