When I think of Neiman Marcus, I think of elegance, class and the best of the best. I only found out recently that this fine department store is also home to the NM Cafe, famous for it’s chocolate chip cookies and this wonderful Neiman Marcus chicken salad. This Neiman Marcus chicken salad recipe is so creamy – it does start with whipped heavy cream after all – and is a terrific upgrade to standard chicken salads. You can serve this NM chicken salad on greens, a croissant or fresh bread, or with your favorite crackers. This wonderful high-protein recipe is filling enough for lunch or dinner. To make this creamy homemade chicken salad recipe you will need the following gluten-free ingredients: cooked chicken (rotisserie or leftover chicken), heavy whipping cream, mayonnaise, celery, red grapes, almonds, fresh parsley, kosher salt and black pepper.

Ingredients
- 1/3 cup heavy whipping cream
- 1/2 cup mayonnaise
- 3 cups chopped rotisserie or cooked chicken (about 1 pound)
- 4 ribs celery, chopped thinly
- 1 cup seedless red grapes, halved or quartered
- 1/3 cup toasted sliced almonds, lightly toasted
- 1 tablespoon fresh parsley, finely chopped, plus more for garnish
- 1 teaspoon kosher salt (or to taste)
- 1/2 teaspoon ground black pepper (or to taste)
Here's how to make it:
- Pour whipping cream in a ceramic or glass bowl. (Use cold heavy cream.)
- Use a whisk to whip the heavy cream into peaks. Slowly add mayonnaise and gently combine.
- Add remaining ingredients and mix to coat everything with the cream mixture.
- Taste and add more salt and pepper, if needed. Serve and enjoy! Store the chicken salad in an airtight container in the fridge.
