It's pairs perfectly with cheering on your favorite team (Go, Bears!) or a Netflix binge (currently streaming The Pitt on HBO Max). We can't stop eating this high-protein baked chili cheese dip recipe!
This drool-worthy chili queso corn dip shortcut recipe is so delicious that your family just may eat the whole thing in one sitting. But don't feel too bad if you do, because it's loaded with protein and vegetables. The protein comes not only from the chili and cheddar but also from the cottage cheese (check out the health benefits of cottage cheese, which is how I added even more protein). This addictive baked chili cheese dip recipe includes four simple ingredients: prepared chili, cottage cheese, corn and cheddar cheese. That's it! And this zesty appetizer recipe is ready in only about 20 minutes, making it a recipe you can make just about any time. All you do is combine the ingredients, spread the dip into a small baking pan, top with additional cheddar then bake until golden brown and bubbling. So easy!
This flavorful gluten-free baked dip recipe is delicious served as an appetizer with tortilla chips or crackers. But you also can serve it for lunch with a side of crusty bread or as a fun side dish with a weekend dinner.

Ingredients
- 1 cup prepared chili (such as from a can or you can make your own chili recipe)
- 1 cup cottage cheese
- 3/4 cup drained whole kernel corn
- 1 1/2 cups cheddar cheese, shredded (divided)
Here's how to make it:
- In a medium mixing bowl, add the chili, cottage cheese, corn and half the cheddar. Season with salt and black pepper, to taste, if desired.
- Stir to combine. (If you like additional heat, you can add a sprinkle of crushed red pepper flakes.)
- Spread the mixture evenly into a small casserole dish or baking pan that's been sprayed with cooking spray. (I used a small Le Creuset casserole dish that measures 7x6 inches.)
- Spread the remaining cheddar cheese evenly across the top.
- Bake in a preheated 375 degree F oven until golden brown and bubbling, about 15 minutes. Remove from oven and allow to cool for a few minutes before serving.
- Store leftover dip in an airtight container in the refrigerator. Reheat in the microwave.
