During busy times I’m always looking for wholesome and delicious recipes that comes together really easily. This blueberry butter swim biscuits recipe is a great sweet breakfast bread, or without the frosting, a wonderful morning or coffee break snack. The biscuits would be a wonderful surprise on Christmas morning!
This biscuits are literally swimming in butter, which of course makes them moist and wonderful. The fresh or frozen blueberries get warm and juicy and make these blueberry swim biscuits something you’ll want to make over and over.
To make this homemade blueberry biscuit recipe you will need unsalted butter, flour (all-purpose or gluten-free flour), granulated sugar, baking powder, salt, buttermilk and fresh or frozen blueberries (check out the health benefits of blueberries). If you want to add a glaze, also grab some powdered sugar and milk.

Ingredients
- 1/2 cup (1 stick) unsalted butter
- 2 1/2 cups all-purpose flour or gluten-free flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder (I use aluminum-free baking powder)
- 1/2 teaspoon salt
- 1 3/4 cups buttermilk (you may need up to 2 cups)
- 1 1/2 cups fresh or frozen blueberries
Optional Glaze
- 1 cup powdered sugar
- 2 - 3 tablespoons milk
Here's how to make it:
- Spray a 8x8-inch or 9x9-inch ceramic dish with baking spray and preheat your oven to 425 degrees F. (I know that sounds hot, but trust me on this.) If your pan is microwave safe, melt the stick of butter in it. If it is metal, melt the butter in a microwave safe bowl and pour into your prepared pan.
- In a medium bowl use a fork to combine the flour, sugar, baking powder and salt. (Omit the salt if your butter is salted.)
- Pour in the buttermilk.
- Stir until a dough forms. If the dough looks a bit dry, add a few tablespoons more of buttermilk until the dough forms and is sticky.
- Gently fold in the blueberries.
- Scrape the dough into the prepared pan and spread it out. (You can spray your hands or a spatula with cooking spray to help spread the dough.)
- Use a dough cutter or knife to roughly cut the dough into 9 sections.
- Place the pan into the preheated oven and bake for 25 to 30 minutes. Turn the pan once during the cooking time. The batter should be browned on top and a toothpick clean when inserted into the center of the biscuits.
- If you would like to frost the biscuits, mix the powdered sugar and milk together and drizzle on the warm biscuits when they are removed from the oven. Let the biscuits cool for a few minutes before serving warm. Enjoy!
