I can almost smell this chicken, wow. I want a piece right now, Donna John ! Love the photos. I think I can actually do this, thanks!
Donna John
It's so crunchy and has lots of flavor. I like it done with legs and thighs, and usually do a combination because I can't decide.

Breast for me, but the coating sounds delicious!! Wonder how it would do in an AIR FRYER ;)
Donna John
AIR FRYER???? lol We need to meet up and make that kitchen appliance switch. :-)
Donna John
Need to make this again soon. So good!

My stomach has been growling since seeing this recipe again. I've got some legs in the freezer, so think it may have to happen. Not only is this chicken super crispy, it's very flavorful because of the seasonings and parmesan. If you try it, be sure to leave a note here (and snap a photo!).

I think this would be a great recipe for cod as well. I did something similar with coconut but WAY over seasoned it. Thank you for this!
Donna John
Yeah! Great idea. I love cod. I'm making this chicken tonight.

Do you recommend thighs and legs or can you use chicken wings and chicken breasts looks delicious let me know which is better thanks
Donna John
Use whatever chicken you enjoy. Just watch the cooking times because breasts tend to take longer and wings take less time.

Hi! This seems like a very easy recipe. However I am wondering one thing. Are we essentially deep frying it and baking it at the same time? How much oil is on the bottom of the chicken? Would that be a good idea to deep fry and bake at the same time? Thank you
Donna John
Yes, you are "frying" and baking it at the same time, which results in a super crispy chicken. It's delicious!

I made this last night and what I found was that it was lacking salt. 1/2 tsp salt was definitely not enough. I did use homemade Italian seasoning which did have salt in it, but for six thighs, 1/2 tsp salt is not enough. Next time I will salt and pepper the thighs first, and then (just in case it gets washed off in the egg wash, I will add more salt in the seasonings. I used about 1-1/2 tablespoons of Italian seasoning which is more than the two teaspoons of spice called for in the recipe.
Donna John
Salt is an ingredient that everyone has different opinions about. Just adjust to suit your tastes. I will make a note in the recipe, so thanks for reaching out! Hope you enjoyed the chicken.
