This really easy roasted salmon with dill is so delicious and good for you, but all your family will care about is how good it is! This roasted salmon recipe with dill comes together in just 20 minutes. There's an optional step of marinating the salmon for 15 minutes so it can soak in the flavors. But even if you skip this step, the salmon is still full of flavor, moist and delicious.

Here is your gluten-free shopping list for this baked seafood recipe: fresh salmon fillets, limes or orange for juicing, olive oil, soy sauce or tamari (tamari is gluten-free), maple syrup, fresh or dried dill, fresh garlic and ground turmeric. Serve the moist, tender baked salmon fillets drizzled with the pan drippings for dinner with your favorite side dishes. We served this roasted dilled salmon with jasmine rice and broccoli, but because this roasted salmon is so beautifully simple, most any side dish works.

Ingredients
Salmon
- 1 1/2 pounds salmon fillets, skin on and center cut
Dill Sauce
- 1/4 cup fresh lime juice or fresh orange juice
- 2 tablespoons olive oil
- 2 tablespoons soy sauce or tamari
- 2 tablespoons maple syrup
- 1 tablespoon dried dill or 3 tablespoons fresh dill, chopped
- 1 large garlic clove, crushed
- 1/4 teaspoon ground turmeric
- 1/8 teaspoon ground saffron (optional)
Here's how to make it:
- Combine all the dill sauce ingredients. Set aside.
- Line a baking pan with parchment paper and place the salmon skin side down on the parchment. Season the fish liberally with salt and pepper. (Use a baking pan that fits the salmon so that the juices won’t burn away.) Pour the dill sauce over the salmon. If desired, you can marinate the fish for 15 minutes by turning it over so the flesh side is sitting in the marinade.
- Turn the salmon skin side down.
- Bake in a preheated 425-degree F oven for 10 to 13 minutes, or until it is cooked to your desired doneness. (The USDA recommends an internal temperature of 145 degrees F.)
- Serve the salmon with a drizzle of the juices and slices of lime or orange, if desired. Store any leftovers in an airtight container and reheat in the microwave.
