Corn casserole was on the table a lot when I was growing up. My mom made a delicious corn casserole recipe that she often served at Easter, Thanksgiving and Christmas. (I am amazed that her corn casserole recipe hasn't been published on 30Seconds yet. Need to fix that!) So I'm always on the lookout for new ways to prepare corn casseroles. This quick and easy spinach corn casserole recipe was a welcome surprise.
The high-protein cheesy corn and spinach casserole recipe has just seven simple, gluten-free ingredients. Not only that, the prep is quick and easy, too. Here is your short shopping list for this spinach and corn side dish recipe: a can of whole kernel corn (I used fire-roasted corn for even more flavor), fresh spinach, cheddar cheese (or your favorite cheese), flour (all-purpose or gluten-free flour), milk, eggs and garlic powder.
This cheesy vegetable casserole is a delicious side dish with dinner, plus you get the health benefits of corn and the health benefits of spinach in every bite. Add the side dish casserole to your dinner rotation or even holiday menu.

Ingredients
- 1/4 cup flour (all-purpose or gluten-free flour)
- 1/2 cup milk
- 3 eggs
- 1/2 teaspoon garlic powder
- 2 cups chopped fresh spinach
- 15 ounces (1 can) whole kernel corn, drained (I used fire-roasted corn)
- 1 cup cheddar cheese, shredded (divided)
Here's how to make it:
- Stir together the flour, milk, eggs and garlic powder in a mixing bowl. Season with salt and black pepper. (For a gluten-free side dish, use gluten-free flour.)
- Add the drained can. Stir. (I used a can of fire-roasted corn. You could also use frozen corn.)
- Stir in the spinach and half of the cheese. (I did not chop my spinach small enough. This recipe works best if you chop it smaller and not leave the spinach leaves whole.)
- Pour the mixture into an oiled or buttered baking dish. (I used a 2-quart round baking dish.)
- Bake in a preheated 375-degree F oven for about 25 minutes.
- Top with the remaining cheese and bake 5 minutes more. Serve. Garnish with chopped green onions, if desired.
- Store any leftovers in an airtight container in the fridge.
