Liquid marinades are a quick way to impart lots of flavor into proteins like chicken. My only thing with marinating bone-in chicken thighs in a liquid marinade is that the skin doesn't get crispy. But I found a way to marinate chicken and still get crispy, crunchy skin!
This marinated baked chicken shortcut recipe is full of citrusy, Mediterranean flavors and has that crispy skin we crave. The secret is so simple: dry the skin with paper towels before baking. Not only that, but a small drizzle of olive oil on the dry skin helps it crisp up even more. This is one chicken dinner that will leave you begging for more.
To make this shortcut recipe you only need three ingredients. Here is your short shopping list for this high-protein baked chicken recipe: bone-in/skin-on chicken thighs, a bottle of liquid marinade (I used a Mediterranean citrus flavor but you can use whatever you like) and olive oil. The chicken bakes up in about 40 minutes, depending on size of the chicken thighs and your oven.

Ingredients
- 6 chicken thighs, bone-in and skin-on
- 1 cup liquid marinade (I used Statesmen Mediterranean Citrus marinade)
- olive oil
Here's how to make it:
- Put the chicken into a food storage bag or shallow baking dish. Pour the marinade over the chicken. Squish the bag or turn the chicken to ensure it's coated in the marinade. Marinate in the fridge for at least 30 minutes and up to overnight. (Use your favorite bottled liquid marinade. I used Statesmen Mediterranean Citrus marinade. For a gluten-free dinner, make sure your marinade is gluten-free. Check the label.)
- When ready to cook, remove the chicken from the marinade and place in a baking dish. Use a paper towel to pat the skin dry, then season with salt and black pepper, if desired. Drizzle the skin with a little olive oil.
- Bake in a preheated 375-degree F oven for about 40 minutes, or until the chicken is cooked through. (Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.) Serve. Store any leftover chicken in an airtight container in the fridge and reheat in the microwave.
