The other night I had a craving for curry. Not the actual dish, but the spice. I had some bone-in chicken thighs thawing on the counter, so I decided to curry-fy them. The baked chicken thighs turned out crispy and juicy, and with that curry flavor I craved. This is one high-protein baked fried chicken recipe that will be on repeat!
To make this baked chicken recipe you only need four simple ingredients you probably already have in your fridge, freezer and pantry. If not, here is your short shopping list: bone-in chicken thighs, flour (all-purpose or gluten-free), curry powder (check out the health benefits of curry powder) and either olive oil or olive oil cooking spray. (You could use other types of cooking sprays.) The chicken bakes up in about 40 minutes to crispy, juicy, golden perfection.
Serve this high-protein dinner with your favorite side dishes. I served mine with brown rice (check out the health benefits of brown rice) and green beans (check out the health benefits of green beans).

Ingredients
- 4 bone-in chicken thighs
- 1/4 cup flour (all-purpose or gluten-free flour)
- 1 tablespoon curry powder
- olive oil or olive oil cooking spray (I used cooking spray)
Here's how to make it:
- Stir together the flour and curry powder in a shallow bowl.
- Season the chicken all over with salt and pepper. Put them into a baking dish. Sprinkle the bottom with a little curry powder, if desired. (You can line the dish with aluminum foil for easier cleanup.)
- Dip the tops (skin side) of the chicken thighs into the seasoned flour. Place them, skin side up, in the baking dish.
- Mist the tops of the chicken with olive oil cooking spray or drizzle with olive oil.
- Bake in a preheated 375-degree F oven until the chicken is golden, crispy and cooked through, about 40 minutes. (Cooking time will vary depending on size or chicken breasts and your oven. Chicken is cooked through at 165 degrees F on a food thermometer.)
- Serve drizzled with the pan drippings. Store any leftovers in an airtight container in the fridge for up to four days.
