During the busy week, my slow cooker can be a life saver. With very little effort on my part, the slow cooker has an uncanny ability to turn a few ingredients into a mouth-watering meal. The latest example from my kitchen is this easy slow cooker chicken recipe. This tender and juicy honey garlic chicken recipe is so flavorful!
We looked forward to this savory chicken dinner all day because the aroma coming from the slow cooker made our mouths water even before we sat down to eat. To make this succulent slow cooker chicken recipe, you'll need to gather the following wholesome ingredients: soy sauce or gluten-free tamari, honey, extra virgin olive oil, onion powder, minced garlic and boneless/skinless chicken breasts. You mix up the sauce, pour it over the chicken in the slow cooker then cook it up on low for about four hours. You can shred the chicken and garnish it with green onions before serving, if you like.
This tender and juicy chicken tastes amazing served over rice or quinoa, or alongside fresh vegetables or your other favorite side dishes. I served it over rice with a side of fresh broccoli and used the leftovers in sandwiches for lunch during the week. It's a wonderful meal-planning recipe, so freeze some for later!

Ingredients
- 1 cup soy sauce (or low-sodium soy sauce, gluten-free soy sauce or tamari)
- 1 cup honey
- 2 tablespoons extra virgin olive oil
- 2 teaspoons onion powder
- 4 teaspoons minced garlic
- 3 pounds boneless/skinless chicken breasts
- salt and black pepper, to taste, if desired (optional, but I used about a 1/2 teaspoon of each)
- 2 green onions, diced, for garnish (optional)
Here's how to make it:
- In a small mixing bowl, add the soy sauce, honey, olive oil, onion powder and garlic. Add the salt and pepper, if using. Stir to combine. (To make this recipe gluten-free, use gluten-free soy sauce or tamari. To reduce sodium, use low-sodium soy sauce.)
- In the slow cooker, add the chicken.
- Pour the sauce over the chicken and ensure that the chicken is coated in the sauce.
- Cover the slow cooker with the lid and cook for about 4 hours on low. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Stir to combine with the sauce.
- Serve chicken as is or feel free to shred it, if preferred.
- Garnish with diced green onions, if desired. Store leftovers in an airtight container and reheat in the microwave.
