This savory slow cooker recipe is so moist and juicy. The flavorful aroma made our mouths water even before we took a single tasty bite! To make this succulent slow cooker chicken recipe, you'll need to gather the following gluten-free ingredients: extra virgin olive oil, balsamic vinegar, garlic, oregano and boneless/skinless chicken breasts. You mix up the sauce in the slow cooker, coat the chicken in it, then cook it up on low for about six hours. You can shred the chicken (or not) before serving, if you like.
This tender chicken tastes amazing served over rice, pasta or potatoes, or alongside fresh vegetables or other simple side dishes. Ingredients
- 1/4 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 3 teaspoons minced garlic
- 3/4 teaspoon dried oregano
- 2 1/2 pounds boneless/skinless chicken breasts (or thighs)
- salt and pepper, to taste, if desired (optional, but I used about a 1/2 teaspoon of each)
Here's how to make it:
- In your slow cooker, add the olive oil, balsamic vinegar, garlic and oregano. Add the salt and pepper, if using. Stir to combine. (For the best flavor, use the best quality olive oil and balsamic that you can.)
- Add the chicken and ensure that it's coated in the sauce.
- Cover slow cooker with the lid and cook for about 6 hours on low. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Stir to combine with the sauce.
- Serve chicken as is or feel free to shred it, if preferred. Store leftovers in an airtight container and reheat in the microwave.
