Ingredients
- 1 cup creamy peanut butter
- 1 cup granulated sugar, plus more for rolling
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Here's how to make it:
- Put all the ingredients except the chocolate chips together into a medium bowl. Mix well.
- Stir in the chocolate chips.
- Roll dough into 1-inch balls, and then roll balls in granulated sugar. Place on two parchment paper-lined baking sheets.
- Press the dough with a fork to flatten. Place one sheet in the oven to bake in a preheated 350-degree F oven for 15 minutes, or until cookies turn light brown. Repeat with the other sheet of cookies. (You could also bake both baking sheets at one time.)
- Cool on a rack for at least 5 minutes and enjoy! Store the cookies in an airtight container to keep them fresh.
