I went on a road trip recently, and for some reason chicken salad was the lunch choice for several days in a row. Out of all the the restaurant chicken salads I enjoyed, this homemade dill pickle chicken salad recipe reigned high above all of them.
This creamy homemade high-protein chicken salad recipe is full of crunch from the celery and onion, and the wonderful taste of dill pickles gives the salad a little extra bit of flavor. Don’t scrimp on the fresh herbs, salt and black pepper to bring out the terrific flavors of this dill pickle chicken salad. Here is your low-sugar, high-protein, gluten-free shopping list for this chicken salad: cooked chopped or shredded chicken (if you love shredded chicken salad, try this genius hack for shredding chicken in a stand mixer), plain Greek yogurt, dill pickles, celery, red onion, pickle brine (from the jar of pickles) and fresh herbs (think parsley, chives, dill, etc.). If you like a sweeter chicken salad, you can add a little honey.

Ingredients
- 2 cups cooked boneless/skinless chicken breasts or thighs, shredded or chopped
- 2/3 cup plain Greek yogurt
- 2/3 cup dill pickle chips or spears, chopped
- 3 medium ribs celery, diced (about 1 cup)
- 1/3 cup red onion, finely chopped
- 2 tablespoons pickle brine
- 3 tablespoons chopped fresh parsley, chives, dill or a combination
- 2 teaspoons honey (optional)
Here's how to make it:
- Add all the ingredients into a large salad bowl. Season with salt and black pepper, to taste. Stir to combine. (You could use rotisserie chicken if you prefer.) Taste and see if you want to add the honey or more salt, pepper or pickle brine. (If you want a sweeter chicken salad, add the honey.) Stir again.
- Serve immediately or cover and refrigerate until ready to serve. Store the chicken salad in an airtight container in the fridge.
