When I saw the amazing blueberries fresh in season at the farmers market this last week I just had to buy them and see what beautiful recipes I could make. This easy blueberry cobbler recipe is what I chose, and I was so incredibly pleased at how easy the blueberry dessert recipe came together! Delicious.
The blueberries are lightly sweetened and bubbly under the crispy biscuit topping. Topped with vanilla ice cream or whipped cream, this blueberry dessert is just about perfect. My husband and friends thought this cobbler recipe was one of the most delicious desserts I've made.
To make this delectable blueberry cobbler dessert recipe you only need seven simple ingredients. Here is your short and sweet shopping list: fresh blueberries (check out the health benefits of blueberries), granulated sugar, flour (all-purpose or gluten-free), kosher salt, baking powder, butter and heavy cream.
Serve this delicious and simple summer blueberry cobbler for dessert topped with either vanilla ice cream or fresh whipped cream.
Cuisine: American
Prep Time: 15 minutes
Cook Time: 35 to 40 minutes
Total Time: 50 to 55 minutes
Servings: 6
Ingredients
Berry Filling
- 4 1/2 cups fresh blueberries, washed
- 1/3 cup granulated sugar
- 1 tablespoon all-purpose flour or gluten-free flour
Dough
- 1 1/2 cups all-purpose flour or gluten-free flour
- 1/2 teaspoon kosher salt
- 1 1/2 tablespoons granulated sugar
- 2 1/4 teaspoons baking powder
- 6 tablespoons unsalted butter (cold), cut into 1/2-inch pieces (if using salted butter just omit the added 1/2 teaspoon of salt)
- 1 cup heavy cream
Here's how to make it:
- In a pie plate or similar-sized pan place the blueberries, granulated sugar and 1 tablespoon of flour. Toss gently to combine.
- Make the dough in a bowl by mixing the flour, salt, granulated sugar and baking powder. Cut the butter into the dough with a fork, pastry cutter or clean hands until it is a coarse meal. Pour the cream into the flour mixture and blend with a fork until the ingredients are just combined. (If the dough is dry, add a bit more cream so that you can form the dough.) Press the dough into a few patties about 1/2-inch thick and 2 inches in diameter. ( I made a few smaller ones as well.) Place the patties on top of the blueberries with some space in between.
- Bake in a preheated 375-degree F oven for about 35 to 40 minutes, or until the top is browned and blueberries are bubbly.
- Serve warm with vanilla ice cream or whipped cream. Store any leftover cobbler in an airtight container in the fridge and reheat in the microwave.
