When I think of brownies I think of chocolate, but these lemon brownies convinced my family that you don’t need chocolate to really satisfy a sweet tooth. This light lemon brownies recipe is not too sweet, and the glaze adds just the right amount of additional sweetness to make this a dessert you will make again and again.
These lemon brownies take only 30 minutes to make and bake, but you’ll have to be a bit patient to cool them before adding the glaze. Here is your shopping list for this lemon brownie recipe: unsalted butter, granulated sugar, powdered sugar, eggs, a lemon for juicing and zesting (check out the health benefits of lemon), vanilla extract, flour (regular or gluten-free), baking powder and milk (dairy or plant-based milk).

Ingredients
Lemon Brownies
- 1/2 cup unsalted butter, melted and cooled slightly
- 1/3 cup granulated sugar or coconut sugar
- 1/4 cup powdered sugar
- 2 eggs, at room temperature
- 1 large lemon, zested and juiced
- 2 teaspoons vanilla extract
- 1 cup flour (all-purpose or gluten-free flour)
- 1/2 teaspoon baking powder
Glaze
- 1 cup powdered sugar
- 1 - 2 tablespoons milk (dairy or non-dairy both work)
Here's how to make it:
- Combine the butter, granulated sugar, powdered sugar, lemon zest, lemon juice and vanilla in a mixing bowl. Stir to combine. Add the flour and baking powder and mix into a sticky batter.
- Use a spatula to spread the batter into a parchment paper-lined 8x8-inch baking pan.
- Bake in a preheated 350-degree F oven for 15 to 18 minutes, or until a toothpick comes out clean. Set aside to cool completely (about 30 minutes).
- Make the glaze by mixing the powdered sugar and milk together.
- When the brownies are cool, drizzle the glaze on the brownies using as much as you desire.
- Cut into squares and enjoy!
- Store the brownies in an airtight container to keep them fresh.
