Ingredients
- 32 ounces (2 containers) burrata cheese
- 1/3 cup pistachios, toasted
- 1 - 2 ripe peaches or nectarines, sliced
- olive oil
- balsamic vinaigrette (optional)
- fresh baguette or other bread, sliced
Here's how to make it:
- Place a small skillet on a stove over medium heat. Add the pistachios and roast for 5 minutes, stirring often to prevent burning. Set to the side.
- Cut the burrata and scoop out the inside creamy filling and place into a bowl.
- Place the sliced peaches on top and sprinkle with the pistachios.
- Drizzle with a bit of olive oil and balsamic, if desired. Serve with fresh bread and enjoy!
