One of my favorite childhood memories is helping my grandmother in her garden. Originally from Croatia, my Old World grandma could grow just about anything – then make that "anything" into something very special. That includes peaches, and her peach crisp recipe is the inspiration for mine. This old-fashioned peach crisp recipe is a summer must!
If you ask your family or friends to tell you their favorite summer dessert, my guess is that many of them will say peach crisp or peach cobbler. It's easy to understand why, given that fresh peaches are among the very best that summer has to offer. There's nothing quite like the sweet simplicity of ripe and juicy peaches (including the health benefits of peaches). This simple peach recipe shines a spotlight on this amazing fruit. To make this easy high-fiber perfect peach dessert recipe (you only need one mixing bowl!), here are the eight wholesome ingredients you'll need: fresh peaches, flour, light brown sugar, butter, cinnamon, salt, vanilla extract and rolled oats. The chopped pecans are optional, but highly recommended (and just check out the health benefits of pecans). The classic scoop of vanilla ice cream is also optional (but not really)! You lay the peaches in a baking pan then layer the crisp topping over them. You bake the crisp until it's golden brown. So easy and delicious (and packs a protein punch, too)!
Serve this not-overly-sweet summer dessert on its own, or sweeten it up with a scoop of vanilla ice cream on top. Some in my family enjoyed it for breakfast with a scoop of Greek yogurt on top. As a snack, a dollop of homemade whipped cream on top will do nicely. Enjoy the old-fashioned goodness!

Ingredients
- 4 cups fresh, ripe peaches, sliced (about 5 medium peaches)
- 1 cup flour (all-purpose flour or gluten-free flour)
- 3/4 cup light brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1/3 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, cold
- 1 1/2 teaspoons vanilla extract
- 1 3/4 cups rolled oats
- 1 cup chopped pecans (optional but recommended)
- vanilla ice cream, for serving (optional but recommended)
Here's how to make it:
- Spray a 13x9-inch baking pan or casserole dish with cooking spray. Evenly distribute the peaches on the bottom of the dish. (You don't have to peel the peaches but you can if you wish.)
- In a medium mixing bowl, add the flour, brown sugar, cinnamon and salt. Stir to combine.
- Add the butter and vanilla. Use a pastry cutter (or your clean hands) to combine until you have a dough. (You can use all-purpose flour or gluten-free flour.)
- Fold in the oats and the pecans, if using. (Oats are naturally gluten-free, but if you need to be sure, use gluten-free oats.)
- Evenly distribute the mixture over the peaches, pressing lightly to ensure that all the peaches are covered in the dough.
- Bake in a preheated 350 degrees F oven for about 30 minutes, or until topping is golden brown.
- Serve on its own or with a scoop of vanilla ice cream (highly recommended)! Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
