Recently I had the wonderful opportunity to spend several days with one of my favorite kiddos, my goddaughter, who loves, loves loves to cook, but is a super picky eater. This fluffy pancake recipe won her over in both regards. She loved the easy pancake recipe and found it very simple to follow – and she thought the pancakes were some of the best ever.
There's no need to reach for the box of pancake mix for this recipe. These breakfast pancakes are from scratch! Here are the simple ingredients you need to grab from your fridge and pantry: flour (all-purpose or gluten-free), granulated sugar, baking powder, baking soda, kosher salt, milk, an egg and either cooking oil (canola, vegetable, etc.) or unsalted butter.
Serve these from-scratch homemade pancakes for breakfast with your desired toppings. Of course we topped her pancakes with a generous dollop of whipped cream and maple syrup, but you can choose any toppings your family likes to make these a family favorite at your house! These pancakes would also be a wonderful part of a brunch spread or even served as a fun snack with fruit.

Ingredients
- 1 1/4 cups all-purpose flour (or gluten-free flour)
- 1 tablespoon granulated sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- pinch of kosher salt
- 1 cup milk
- 1 large egg
- 1 tablespoon cooking oil or unsalted butter, melted and cooled
Here's how to make it:
- Place a nonstick skillet on the stove on medium. Combine the flour, sugar, baking powder, baking soda and salt in a medium bowl and mix with a fork to combine. Add the milk, egg and oil and blend again. The mixture will be mostly smooth but a few lumps are fine. (For gluten-free pancakes use gluten-free flour.)
- Use a large spoon to place batter in the pan, adjusting the amount for the size of pancakes you would like. Let the pancakes show air bubbles on top before flipping to the other side.
- Cook for another minute or so or until the pancakes are cooked through.
- Serve immediately or place on an oven-safe plate in a 200-degree F oven to keep warm until all the pancakes are cooked and ready to serve.
