The broccolini at my grocery store is hidden in the corner beside the other vegetables that are often overlooked. Being one of my favorite vegetables, I know where to find it. This week, I was happily surprised that the broccolini was in a bin beside the regular broccoli and on sale. It's about time that this delicious vegetable was put into the spotlight!
This simple broccolini recipe lets this vegetable, which is a hybrid of broccoli, shine. All you need is 10 minutes and three simple ingredients. If you want a vegan side dish, use vegan butter.
Serve this crisp-tender broccolini as a side dish with any protein, from chicken to pork to lamb to beef to seafood. You can also chop the broccolini up and use it in grain bowls, pasta salads or lettuce-based salads.

Ingredients
- 1 bunch broccolini, ends trimmed
- 1 tablespoon butter
- 3 fat cloves garlic, minced
Here's how to make it:
- Put the broccolini into a skillet with a lid. Add just enough water to cover the bottom of the pan. Bring to a simmer, cover and cook until broccolini is just tender, about 3 to 4 minutes. (Don't add too much water.)
- Uncover the skillet and let any remaining water cook out. Add the butter and garlic. Cook, stirring, about 1 to 2 minutes. (Add as much garlic as you like! For a vegan side dish, use vegan butter.)
- Season with salt and pepper and serve. Store any leftovers in an airtight container in the fridge.
