I’m so excited about this seafood recipe! What is everything salmon? Think deconstructed everything bagel with a schmear, lox and capers minus the bagel, and you have this delicious skillet salmon recipe.

This pan-fried fish recipe with a creamy caper sauce is simple enough for a weeknight and elegant enough to wow guests. My husband and friends liked it so much they immediately asked if I would cook it again soon.

This crispy everything salmon is so easy to prepare. You just roll the salmon filets in the everything seasoning and pan fry. The creamy caper sauce is so delicious, and the tangy tomato and onion salad is a really nice pairing with the fish. Here is your short shopping list for this high-fiber recipe: a red onion, a lemon for zesting and juicing, cooking oil, fresh tomatoes, everything seasoning, fresh salmon fillets, cream cheese and capers in brine.

Ingredients

• 1 red onion, halved and thinly sliced
• 1 large lemon, zested and juiced
• 4 tablespoons neutral cooking oil (divided)
• 2 medium beefsteak or heirloom tomatoes, halved and thinly sliced
• 1/3 cup everything seasoning blend
• 4 salmon fillets (6 to 8 ounces each)
• 4 ounces cream cheese
• 3 tablespoons capers in brine, plus more brine as desired

Here's how to make it: 

1. In a medium bowl add your sliced onions and cover them with cold water. Swish them around a bit and then drain. Repeat one more time to remove some of the sharpness from the onion. Squeeze the juice from half the lemon over the onions and add 1 tablespoon of oil and a good pinch of salt. Use your clean hands to massage the onions for a few minutes until they turn light pink and soften slightly.
   
2. Add the tomatoes and toss. Add more salt, if needed. Set aside.
   
3. Add the everything seasoning to a plate and place the salmon on top. Coat the salmon all over top and sides. Leave the seasoning off the salmon skin if your filets have skin. (If the skin is off make sure to coat that side as well.)
   
4. Heat 3 tablespoon of oil in a large skillet on medium heat. Add the fish, skin side down (if they have it) to the hot oil and sear for about 4 to 5 minutes. Flip the salmon over, reduce heat to medium-low and cook for an additional 2 to 3 minutes, or until the filets are cooked to your desired wellness. (Recommendation for salmon is 145 degrees F internal temperature.) Once or twice check the underside of the salmon to make sure it isn’t burning. Turn heat down if the filets are burning. Place cooked filets on a plate and set to the side.
   
5. Wipe your skillet with a paper towel to remove anything in the pan, and place back on the stove on low heat. Slice the cream cheese into a few chunks and add to the pan with capers and brine, the lemon zest and the juice from the second half of the lemon and 3 tablespoons of water. Stir the mixture with a rubber spatula until the cheese has melted into a creamy sauce. Add more brine or water, if needed, to make the mixture smooth but not runny. Taste the sauce to see if more salt or brine if needed. Turn off heat.
   
6. Place a few tablespoons of sauce on your serving plates, top with the salmon filets and add the tomato onion salad on the side and enjoy! Store any leftovers in an airtight container in the fridge.
