I mean, how can I choose between my favorite salmon patties recipes and my favorite baked salmon recipes? They're all so good. But this easy Mediterranean baked salmon recipe with garlic, capers and parsley has definitely moved to the top of my favorites list.
Parsley gets relegated to a supporting role as a garnish in so many recipes. What I love about this savory salmon recipe is that parsley gets to shine as one of the featured ingredients. And rightly so – it's really good! There are two types of parsley you'll typically find: curly leaf parsley, also known as French parsley, and flat leaf parsley, also known as Italian parsley. I love using Italian parsley because it has more flavor, allowing it to shine in this delicious baked salmon recipe. Plus, it provides the health benefits of parsley.
This simple salmon recipe is a high-protein addition to a heart-healthy Mediterranean diet. With just five ingredients and ready in about 20 minutes, this succulent baked salmon recipe is a nutritious, delicious dinner that's very easy and quick to make. But what I love most about this salmon recipe is that it tastes so moist, fresh and delish.
Here are the gluten-free ingredients needed to make this simple seafood dinner: fresh salmon, extra virgin olive oil, minced garlic, capers and fresh parsley. You put the sauce ingredients together then spread it over the salmon. After only about 15 minutes of baking, you're ready to serve.

Ingredients
- 1 pound fresh salmon filet
- 3 tablespoons extra virgin olive oil
- 3 teaspoons minced garlic
- 3 teaspoons capers
- 2 tablespoons fresh parsley, diced
Recipe Notes
- I used Italian parsley, but you could use curly parsley or French parsley (chervil), if desired.
- You can add more fresh parsley as an optional garnish, if you like.
- Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.
Here's how to make it:
- Place the salmon filet, skin side down, in a casserole dish or baking pan (I lined mine with aluminum foil for easier cleanup). Season with sea salt and black pepper, to taste, if desired.
- In a small mixing bowl or large measuring cup, add the olive oil, garlic, capers and parsley. Stir to blend.
- Spread the mixture over the salmon, ensuring it is evenly distributed.
- Bake the salmon in a preheated 400-degree F oven for about 13 to 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
- Remove from oven and serve with your favorite vegetables or side dishes. Garnish with additional fresh parsley, if desired.
